Originating from the mountains of Taiwan, the leaf tea is fermented to approximately 50% and then wilted in the sun. Frequent turning of the tea in bamboo baskets during the drying process allows the Oolong to develop a mild aroma and large, wild curly leaves.

Amount per cup: 1 teaspoonful
Brew time: 2-3mins
Water temperature: 85°C

Brewing Oolong Tea
Use about 1 level teaspoon per cup (adjust according to taste).
Add water that is around 80-90°C.
Allow to brew for 2-3 mins and be careful not to over brew.

Oolong teas traditionally come from Taiwan and China but other tea growing countries are now also producing Oolong style teas.
Oolong teas sit between Green and Black teas as the processing allows a degree of oxidation to take place. Some Oolongs are oxidised to as much as 85% giving way to more woody, rich fruity characteristics. Whilst some Oolongs receive as little as 5% oxidation and would easily pass for a green tea; they can be fresh, sweet, soft and buttery.
