Lovely afternoon tea

Unusual, but a great find.

I'm a green tea drinker, so I don't usually drink Darjeeling tea. Recently though my wife was trying to track down a Darjeeling she had had some years ago, and which she had found really pleasant. We went back to the shop she had bought it at, but their current offering was not what she remembered at all. After some time, she began to think it may have been a green Darjeeling, whereas all the Darjeeling teas we could find were black teas.

So we did an online search to see whether there was such a thing as a green Darjeeling, and discovered both the Proper Tea Co. and this single estate Darjeeling tea. We bought a small batch to try, and yes, it was indeed the taste that she had remembered. Curious, I tried it too and I found it was a pleasant alternative to my usual jasmine green tea.

So we now have two tea caddies in our normal tea and coffee cupboard – plus a range of other teas elsewhere. My jasmine, and this green Darjeeling.

This afternoon we're packing for a short holiday. Both tea caddies have gone into our luggage!

What will you choose to go in yours?

  • Brewing Green Tea

    Use about 1 level teaspoon per cup (adjust according to taste).

    Add water that is around 75-80°C.

    Allow to brew for 1-3 mins and be careful not to over brew.

  • Green teas are very sensitive to water temperature. If the tea is infused with water that is too hot it will be rather bitter and display a slight 'metallic' taste. Get the water temperature correct and discover the true delights of green tea. 

    We recommend that for most green teas water temperature should be around 75°C to 80°C. In practical terms this means allowing the kettle to cool down for about 4-5 minutes after it has switched itself off from boiling... YES! AS LONG AS THIS!!
